Popular Culinary Trends this Year

That Greek philosopher who said that “there is nothing new under the sun” clearly wasn’t a foodie! There seems to be a never-ending sense of exploration, inventiveness and creativity that only comes with culinary tastes. Let’s look at just a few of the new and fascinating ways we are fueling our bodies in 2022.

  • Plant-based foods are exploding in popularity—Studies show that, as a whole, Americans are reducing their dependence on meat, embracing faux meat products, such as plant-based burgers, vegan ice creams and eggs, and even plant-based wings. You can even get an “impossible burger” at some fast-food outlets.
  • Chefs are taking a more holistic approach—There’s much more interest in “zero-waste” cooking, where little to nothing is thrown out without first being used. Obvious examples include using animal bones to make broth/stock, but other creative chefs use plant leaves (such as carrots or cauliflower) to make sauces, salads and even pesto.
  • Chefs are unlocking the power of so-called “superfoods”—The acai berry has received a lot of press, but there are many other such foods, such as turmeric, maca powder, chlorella powder and flax powder, that can be added to anything from a smoothie to an omelet to a latte
  • Non-alcoholic beverages are getting better and better—It’s one of the byproducts of the craft beer movement. It’s also a generational thing, as many Generation Z and Millennials show far less interest in alcoholic beverages. There are already a number of popular non-alcoholic beers on the market and bartenders are experimenting with flavorful, but booze-free, cocktails.
  • There’s greater interest in how your food interacts with your gut—Medical science has discovered that the bacterial content in your stomach can affect a wide range of health issues. We’ve long looked at bacteria as a bad thing, but studies show that the right bacteria in our system can actually make us healthier. Some of the foods recommended to help increase the good bacteria in your belly include kimchi, kombucha, sauerkraut, raw onions and garlic.
  • There’s more than one way to make a cup of Joe—Go to ten different coffee shops and you might find as many ways of making a cup of coffee. It might be a batch brew or use a pour over or syphon, or you might get a French press or Aeropress.
